I hate to admit that I'm on my second one; the first one just seemed to run too hot, even on a low setting. I used to use it to make chicken stock but I now do that in the Instant Pot since it's faster and doesn't smell up the kitchen as much. I still use the crock pot for beef stew (Ina Garten's version), chicken with salsa, Mongolian beef and a few other standbys.
Ruth, I'm going to make this stew, with your improvements, of course. The weather is perfect for it, and I have a long-neglected slow cooker. Thanks for the inspiration.
Bought one 20 years ago along with cookbooks and everything I tried to make in it, came out looking grey and unappealing. So I gave up on it and gave it away.

Iβm a little embarrassed to say I only use my crockpot to make dog food once a month for my happy, healthy senior pooch.
