When I first saw the title of your newsletter, I thought it was about having a break away from eating dairy (not that I have anything against diary), but I see now it's quite the opposite. I enjoyed reading it as usual. Some of those grilled cheese sandwiches look pretty good. My favourite cheesy pasta dish would be cannelloni with ricotta filling.
I love all things pasta and all things cheese, so the combo is a taste of heaven. Last night we dined with friends at a favorite Indian restaurant and the server brought us a plate of garlic cheese naan that was out of this world! I don’t think I could EVER give up dairy, though I know there are environmental implications of that statement, so I’ll try to moderate my craving! Thanks for your comment!
Hope you had a good weekend, Ruth! Here it's already 9.30 pm and we're about to go for a walk to the gelato place down the street. Favourite flavour is goat milk ricotta with pistachios, in perfect Shavout style, right? :)
I remember tasting some delicious gelato in Venice when we visited about 10 years ago. It was probably the best I’ve ever eaten, but I can’t remember what flavor I had--perhaps stracciatella. The goat milk with ricotta and pistachios sounds absolutely perfect for Shavuot! I hope I can be in Venice to have some when the holiday comes next year. I hope you had a nice weekend too. ❤️
I’ve never tried just noodles and cottage cheese, but I came across a simple recipe mixing ricotta, pasta and herbs the other day that sounds terrific. Thanks for your comment,Loren!

Lokshen and cheese. Egg noodles with cottage cheese mixed in.

I learned simplicity from my mother!
Great piece! Bring on the grilled cheese!
Coming later today--on Fred’s corn rye! 💝
