FINALLY, we had Anaheim chiles at the farmers' market in Madison, WI, and I made this! I could have waited until Hell froze over and not got Hatch chiles up here, but happy to say I did not wait! I made the non-kosher version, using the broiler method you mentioned to roast the chiles. Phenomenal! Thank you, Ruth!

Chili quiche! YES! Another great post with lots of ideas and scrumptious pictures and recipes, Ruth! Also: I got the scissors and ended up giving them to my brother who owns a restaurant, love ‘em, ordering a new pair for me! 😂 ✂️

"Hatch schmatch" 😂 Love it! I started out thinking "What on earth are Hatch chiles, and how did I miss them during my California years?" but I see how they could be missed. Your veggie version of the quiche sounds lovely, and I'll give it a try, maybe with Anaheim chiles. Btw, I've broiled red bell peppers to roast the skins, and the instructions had me pop them in a paper grocery sack to complete the process by steaming, which worked well!
I think Hatch has become a "thing" more lately. Not sure when you lived in CA, but maybe it was after that time because I grew up here and certainly have no memory of Hatches. Of course my Scottish mother wouldn't have had a clue what to do with them--maybe serve them with her kippers!
Yes, paper bags work well too to help remove the skins, Annette. I tried out the Anaheims yesterday as they have a lot of those here also. They look almost identical to the Hatches, but, perhaps it was my imagination, but I thought their flavor wasn't quite as good. But maybe it's the power of suggestion--or that the Hatches are really, really fresh right now.

What a coincidence! My boyfriend just came back from the supermarket with a bag of what look like hatch chiles. He said "just smell them, they're so fragrant, I had to get them". Not sure whteher they are actually hatch chiles or a local variety (perhaps from southern Italy) but they do taste good :)
That is a coincidence, Sinù! I do think there are plenty of wonderful chiles around the world, not just the Hatch. I'd like to try them all--though perhaps not the very hottest ones! 😝 Please let me know how you use them!
Not a fan of the hot type either, unlike my boyfriend who's half from Calabria 🤣 usually, he fries them lightly on a pan with some olive oil, easy peasy!
