Goodness that looks great! But complicated. But great! (sigh)

Tomorrow I am off to pick up a corn rye from Victor Bene's bakery in Gelsons, to see if it measures up to the corn ryes of my childhood. Pricey! But easy.

Thanks for your comment, Marcy! This rye IS complicated and I haven’t made it for a while myself. Let me know what you think of the Victor Benes corn rye. I like it quite a bit, but it’s nothing like what I made—far lighter and less dense. Waiting for cooler weather to get serious about bread baking again!

I heard from Rabbi Mark Hyman, emeritus rabbi of Congregation Tikvat Jacob Beth Torah in Manhattan Beach, that he had found a pretty good rye in Los Angeles at Schwartz’s Bakery, Glatt Mart, some Ralphs markets, the Pico Kosher Deli, and Labels Table Deli. If anyone has other recommendations, please add them to the comments section of this post.
