I'd have egg washed the top surface to get a nice brown-up. As the Japanese say "To eat a food is to taste it, to see a food is to know it." (okay, full disclosure, I made it up. But it sounds good, no?)
Baked these today. They taste nothing like the bakery version, nor do they taste like a chinese cookie. More like a sugar cookie. The ganache is also not the same as the bakery ganache. These are a poor reproduction. They also spread a lot even though I only used shortening. Sorry.
Sorry, the recipe didn’t work out for you, Danica. I did my best to approximate the ones I had tasted, but there was no recipe forthcoming from the deli. I may try again based on your comment and see what I come up with.
I grew up in Los Angeles and remember these cookies very well. I’ve lived in South Orange Co. for 50 years now and people here look at me as if I’m crazy if I ask for a Chinese cookie. I can’t wait to try this recipe and I thank you so much for it. I remember the chocolate center had a particular flavor and it was very special. NOT a Hershey’s Kiss. Although the Kiss is a real treat too. Once again, thank you.
Looking forward to trying these - will likely make them a little smaller. My favorite deli cookie is the black and white cookie. When done properly and fresh, they are great. When not so much, they are still somewhat edible. Having said that - the favorite in our house is still chocolate chip which I think I have perfected during the pandemic. Lots of trial and error.

This is great - Thank you for sharing! I've always wondered about these. My favorite deli cookie has to be the black and white cookie... it is my dad's favorite from growing up in NYC and it has long been a family favorite. (We sometimes get them from Katella Deli in Los Alamitos)
